I am a Puerto Rican girl foodie 100%, and I love crunchy tostones! I eat them quite often. Why? Because these crunchy treats are very satisfying, especially when you are in the mood for a crunchy something.

Tostones are twice fried plantains, and if you have yet to eat them, I highly suggest you do. They are super, super yummy! (Can you tell how much I love them?) You can eat them for breakfast with eggs or as a snack. They are a great replacement for chips too.

Oh and don’t think I would dare eat these beauties if they were not healthy. Plantains are healthy, and they contain the following health benefits, fiber – so beneficial for the digestive health and weight loss, vitamin C – supports a healthy immune response, vitamin B6 – healthy metabolism and excellent source of magnesium – protect the body from bone loss.

  • Important - Make sure your plantains are at room temperature. Cold plantains are very hard to peel.
  • Then cut off both ends of the plantains and discard the tips.
  • With a pairing knife, slit the peel along the entire length of the plantain in 2 to 3 different areas. Cut only as deep as the peel.
  • Remove the peel by inserting the tip of your fingers between the flesh and peel. Then carefully peel the flesh back and off.
  • Cut the plantains into approx 11 thick slices. I like to cut it straight.
  • Heat the coconut oil in a large skillet set over medium heat.
  • When the pan is hot enough, add the plantain and fry the slices for about 2 minutes, or until they turn crisp and golden brown.
  • Remove the plantain to a cutting board and immediately flatten them down with a flat object or a tostonera.
  • Return the plantain to the skillet and fry for a second time, about 1 minute per side this time.
  • Remove the tostones from the skillet and sprinkle generously with salt.
  • Serve & eat them immediately.
