Butternut Squash is a fantastic vegetable with lots of health benefits. This vegetable contains a significant amount of fiber, vitamin C, vitamin A and potassium. Butternut squash is a great vegetable to eat if you are looking to lose weight, improve bone health and best of all because butternut squash contains a good amount of vitamin C, consuming it during the cold season can help protect your health from those nasty cold viruses.
My favorite way to consume butternut squash, in a creamy soup form with apples, coconut milk, and cinnamon. So good and so warming.
Plus, my version of butternut squash soup is my kiddies absolute favorite so double win-win for me.
