My little girl saw this treat in a local magazine, and she asked me if eating chia pudding for breakfast would be a good idea. Absolutely! This treat is totally healthy and good for you. It’s packed with chia seeds, which are incredibly healthy, loaded with fiber, protein, Omega-3 fatty acids and various micronutrients. Then combined with raw honey – which contains antibacterial properties and blueberries – which are a powerful antioxidant food.

Seriously, having my little girl eat this for breakfast makes me feel so good that she is starting her day with a powerful, healthy punch.

Chia Seed Breakfast Blueberry Pudding

Ingredients

  • 1/2 Cups unsweetend almond milk or full fat coconut milk
  • 1/4 Cup of chia seeds
  • 1 Tablespoon raw honey (local if possible)
  • 1/2 Teaspoon vanilla extract
  • 1/4 Cup frozen wild blueberries, thawed (or fresh)

Instructions

  • Whisk together the almond milk, chia seeds, honey, salt and extracts in a bowl.
  • Cover and refrigerate for at least 4 hours.
  • Once thickened, top with blueberries
